Cabbage Rice

Cabbage rice is a mildly spiced, flavorful, and easy to make one pot meal. It is made with loads of cabbage, basmati rice, peanuts, and a few spices. It makes for a perfect lunch or dinner recipe in no time. Cabbage rice can be made in a pan or a pressure cooker. 

You will need to soak the rice before cooking it. Soaking speeds up the cooking time. By soaking the rice and shortening the cooking time, you will get more flavorful results. Additionally, you will get perfectly separated grains by washing and soaking the rice.

Cabbage is high in fiber and contains powerful antioxidants. It is packed with impressive nutrients. It is a versatile vegetable used in many dishes in different cuisines around the world.

When goodness of the cabbage is combined with some peanuts, it adds a good source of healthful fat and protein in your meal. It makes a quick, healthy, and a perfect lunch box recipe liked by everyone!

I grew up eating cabbage rice frequently with some tomato saar (tomato soup in coconut milk) and roasted papad. My mom used to prepare this rice in a pan. Her cabbage rice was very popular among our relatives and friends. I always make this rice in an Indian pressure cooker and it gives the same results.

Ingredients

  • Cabbage
  • Basmati Rice
  • Peanuts
  • Mustard seeds
  • Cumin seeds
  • Asafoetida/Hing
  • Turmeric powder
  • Goda masala (Optional)
  • Coriander powder
  • Cumin powder
  • Ginger
  • Green chilis 
  • Curry leaves
  • Coriander leaves
  • Oil

Cabbage Rice Step By Step Recipe 

Wash basmati rice 3 times very well. Soak the rice in some water and set aside for 1 hour.

Heat some oil in a pressure cooker on a medium heat. Lower the heat, add peanuts and fry them for 30 seconds. Keep them at one side of the cooker or set aside in a different plate. 

Add mustard seeds, let them splutter. After that add cumin seeds, asafoetida, ginger, chilis, and curry leaves. Add peanuts if you have kept them aside. Mix everything well. 

Preparation

Next, add cabbage, turmeric powder, coriander powder, cumin powder, goda masala, rice, and salt. Roast everything for 30 seconds.

Add 2 1/4 cups of water and mix well. Close the pressure cooker lid and set it to medium-high heat for 1 whistle. 

Once all the pressure is released, open the lid and keep it half open for about 5-7 minutes.

Fluff the rice with a fork and then serve it by garnishing with some chopped coriander leaves. 

Cabbage Rice In The Pan

Follow the same procedure until adding rice. Add some warm water in the rice mixture so the temperature will remain the same. It will turn soft and cook faster as well.

Cook it on a medium to low heat for about 5-7 minutes and mix it well. Cover it with a lid and cook for about 5-7 minutes on a low heat.

How To Store Cabbage Rice?

Store cabbage rice in a bowl or container for 1 day on a countertop. 

It can be easily stored in a refrigerator for 4 days in an airtight container. Sprinkle 1 tbsp water on it and heat it up in the microwave for a few minutes.

How To Serve Cabbage Rice?

Serve the rice with tomato saar and some roasted papad.

Cabbage rice can be served with any raita – especially cucumber raita, onion-tomato raita, and bundi raita, along with some papad.

You can serve the rice along with masala chaas (spiced buttermilk) or plain curd as well. 

This is a great recipe for kids lunchbox along with some fresh fruits and cucumber slices.

Notes

  • If you like your rice more spicy then add few more chilis as per your taste.
  • You can add clarified ghee while serving the rice to enhance the taste.
  • Try to soak the rice at least for 30 minutes before cooking.
  • You can make the cabbage rice in the pan as well. If you feel the rice is dry add 1/4 cup of extra water.
