Sweet Potato Stir Fry – Ratalyacha Kees
Sweet Potato Stir Fry is a sweet and spicy recipe from Maharashtra. Traditionally, it is called “Ratalyacha Kees” in Marathi language. This spicy, nutty, and flavorful dish is a breakfast or snack recipe. It is usually made for vrat or fast for religious reasons in India.
This delicious sweet potato stir fry is made with shredded sweet potatoes, roasted crushed peanuts, ghee, green chillies, and cilantro. It surely makes a perfect dish for a fast or vrat. Additionally, it is a quick recipe which will come together in under 15 minutes!

Sweet Potato Stir Fry Step By Step Recipe
Scrub and wash the sweet potato to remove all the dirt and peel off the skin with a peeler. You can skip peeling the skin if you want.
Sweet potatoes can be shredded into long strips using the larger hole of a box grater or food processor.
Transfer the shredded sweet potato into a bowl of water while shredding the next batch so they will not turn dark in color. Set aside for 15 minutes.
Squeeze out all the water from the shredded sweet potatoes.
Heat some ghee in a pan on medium heat.
Add some cumin seeds and let them crackle. Lower the heat and transfer the green chillies.
Transfer the shredded sweet potatoes, add some salt, and mix well.
Cover the pan with a lid, increase the heat to medium low, and cook the sweet potatoes for 5-6 minutes.
Take out the lid, let the steam release, and don’t stir with a spatula for 30 seconds.
Add some crushed roasted peanuts, sugar, mix well, and cover the pan for another 2 minutes.
Next, add some cilantro leaves, mix them well, and let the sweet potatoes cook for another 2 minutes by frequently stirring them.
Turn off the heat and serve with some coconut and cilantro. You can squeeze some lime juice if you like.
Tips For Making Sweet Potato Stir Fry
- Scrub the sweet potatoes very well to remove the dirt from them.
- You can keep the sweet potatoes in the water for 30-40 minutes as well.
- Remember to squeeze out all the water from the sweet potatoes or else the stir fry will turn mushy and soggy.
- Removing the steam without disturbing the sweet potatoes is very important. It will help to release all the raw smell from them.
- Do not add crushed peanuts while the shredded sweet potatoes are raw.
Variations
- Skip peeling off the skin of sweet potatoes.
- You can skip adding the shredded sweet potatoes in the water if you are planning to cook them immediately. The color of the final sweet potato stir fry will be a little darker.
- If you are following a vegan diet then add some coconut oil in the recipe.
- You may squeeze some lime juice while serving the dish.
