This creamy soup is very comforting and loaded with nutrients, fiber, iron, and many more. Broccoli spinach soup is a plant based, nut free, gluten free, and dairy free dish. It is a very versatile soup recipe. You can add some cream or coconut milk according to your dietary needs. 

The soup tastes so rich and luscious without making a roux – made by using flour, butter, and milk. Onions give some sweetness and creaminess to the soup. Feel free to add some diced potatoes while cooking the broccoli to make it thicker. 

A comforting, flavorful, and creamy bowl of soup is very satisfying. It makes a perfect heart warming soup on chilly winter days. Enjoy it on its own, with some croutons, or warm bread. I have garnished it with some sautéed garlic, broccoli, and spinach for some amazing flavors and texture. Make it as a side dish along with some sandwiches, burgers, or wraps.

Ingredients

  • Broccoli
  • Spinach
  • Onions
  • Garlic
  • Salt
  • Black pepper
  • Olive oil

Broccoli Almond Soup Step By Step Recipe

Making The Soup

Heat 2 tsp olive oil in a large pot on medium heat. 

Add some chopped garlic and sauté for 10 seconds. 

Transfer some chopped onions, salt, and sauté them for 1 minute until translucent and slightly changing their color. 

Add the rinsed broccoli florets, stems, and cook them until the raw smell is out for about 5-7 minutes.

Add 2 cups of water, cover the pot with a lid, and cook the veggies for about 12-15 minutes. Let the broccoli cook until it turns soft. 

Turn off the heat and add the spinach until they have wilted. 

Add some black pepper powder.

Blend the veggies until smooth with an immersion blender or regular blender with 1 cup water. You can add some more water for achieving the perfect consistency according to your taste. Adjust the salt and boil the broccoli almond soup before serving.

For Garnishing

Heat 1 tsp oil in a pan on medium heat, add finely chopped garlic. Sauté them for 15 seconds until slightly brown and add some finely chopped broccoli. 

Cook the broccoli for about 1 minute by adding a pinch of salt. Turn off the heat and add some chopped spinach and mix well.

Serve the piping hot soup in 3 bowls, sprinkle some black pepper powder and divide the veggie toppings equally. You can drizzle some olive oil on top.

Tips For Making Vegan Broccoli Spinach Soup 

  • Make sure to keep medium sized broccoli florets so they will cook equally and fast. 
  • Do not throw away the tender stems of broccoli, they are very nutritious and taste amazing. 
  • If you are using a hand blender, the soup blends pretty fast if the broccoli florets are medium sized. 
  • Cooking the broccoli in the pot for 5-7 minutes is very important before adding the water to it. The broccoli will release a raw smell from them and the broccoli spinach soup will turn out super delicious. 
  • Make sure to add the spinach once you turn off the heat. Just wilt the leaves for sometime in the pot. It will give a nice color to the soup.
  • While using a regular blender, make sure to add warm veggies before blending into a smooth soup. 

Variations

  • Use pre-cut or frozen broccoli florets for convenience. 
  • You can blanch the spinach by adding them to the hot boiling water and then washing them with ice cold water. This step will provide a very bright color to the soup. 
  • Add some diced potatoes in this vegan broccoli spinach soup for giving wonderful creaminess and thickness to the soup.
  • Feel free to add some cream or coconut milk while boiling the broccoli spinach soup. 

How To Store Vegan Broccoli Spinach Soup?

You can store the broccoli spinach soup in an airtight container for 4-5 days in a refrigerator. Boil the soup over a stovetop before consuming. 

Store the soup in a freezer in an airtight container for 2 months. Let the soup sit on a countertop for 1 hour and boil in a pot before serving.
