Step By Step Creamy Avocado Pasta Salad Recipe
Cooking The Pasta
In a large pot, boil 6 cups of water, add the pasta, and cook according to the package directions.
Add the sweet corn in the pasta water about 3-4 minutes before your pasta is about to get cooked.
Drain the cooked pasta and rinse under the cold water to cool. Set the pasta aside to drain it very well.
Prepare The Dressing
Scoop the avocado in a blender jar. Add cilantro, lime juice, garlic cloves, salt, and ½ cup water.
Blend everything into a smooth yet thick dressing and set aside.
Assemble The Salad
In a large mixing bowl, add the drained pasta and corn.
Combine bell peppers, tomatoes, cilantro, black pepper, and crushed peppers.
Next, add the creamy avocado dressing and gently mix everything. Taste the pasta salad at this point and adjust the salt, lime, and peppers according to your taste.
Serve the salad in individual bowls and sprinkle some feta cheese on top.
