Berry Beet Smoothie

This beautiful looking smoothie is made with cooked beets, strawberries, blueberries, bananas, some milk, and honey. You can easily make it vegan friendly by adding a plant based milk and skip honey.
Drinking a smoothie everyday provides a nutrient-rich meal. Beets, blueberries, and strawberries are very rich in antioxidants. They create a vibrant color in the smoothie, packing fibre, iron, and vitamin C in it. Bananas add potassium, sweetness, thickness, and creaminess in the smoothie.
Beetroot is a sweet and earthy tasting vegetable. When it is combined with berries and bananas, the flavor of beets gets quite nested. So you won’t get an earthy tasting smoothie. You will taste a delicious, creamy, and thick smoothie.
How To Freeze Fruits?
- I have used fresh berries in this recipe as they are in season. After cleaning both types of berries well, chop the strawberries into medium pieces. Freeze them together or separately in a freezer safe container or a zip lock bag. You can use store bought frozen berries as well.
- Freeze the riper bananas by slicing them into small pieces. Line a tray with parchment paper and line up banana pieces in a single layer, cover with plastic wrap, and freeze them for 2 hours. Transfer them to a freezer safe container and store until ready to use. You can freeze whole bananas as well, thaw them for 30 seconds, and slice them up just before adding them to the smoothie.

Berry Beet Smoothie Step By Step Recipe
How To Cook Beets?
Wash and remove the ends of the beets, cut them slightly in the middle, and keep them in a steel container. In a pressure cooker, add some water, put in the steel container, and cook for 3 whistles.
You can cook the beetroots in boiling water until tender – it may take around 20-25 minutes. Let them cool completely.
Remove the beet peels and dice them into medium pieces.
Note: Cooked beets will stay good for 4 days in a refrigerator. Make sure they are cool completely before storing. Cover them with a plastic wrap.
Blending A Smoothie
In a blending jar, add all the ingredients except honey. Blend everything well until the mixture is completely smooth for about 1-2 minutes.
Add some honey or any sweetener of your choice. Blend it well for about 10 seconds and serve.
Tips For Making Perfectly Smooth Smoothie
- Use a good quality high-power blender like Vitamix, Blendtec, or NutriBullet. You will achieve a perfectly blended and smooth smoothie every time.
- If you don’t own any high-power blender, chop the fruits into small pieces. Use cooked beets and chop them into small pieces. If using uncooked beets, grating them will help.
- Run your blender for a long time to achieve a smoother consistency if you aren’t using a high-power blender.
Variations
- Feel free to use uncooked beets by cleaning, peeling, and chopping them into small pieces. If you have a good quality high-power blender, you can slice the beets as well. I like to use cooked beets in my smoothies.
- You can use freshly chopped fruits as well if you have not frozen them in advance. Add a few ice cubes while blending the smoothie. Frozen fruits will help keep your smoothie thick and frosty.
- I have used 1% milk in the recipe but I have tried using almond milk in the past and it tastes delicious as well.
- If you find the smoothie is quite thick for you, add some milk to thin it. I like my smoothies thick.
- You can add 1 cup of yogurt and 1 cup water as well to add some probiotics in your smoothie.
- Mixed berries go really well in this recipe, like blackberries, blueberries, raspberries, and strawberries. The color and taste will vary depending on your berries ratio.
- You can add a few almonds, hemp seeds, or chia seeds as well to add a dose of some protein.
