So anyone can enjoy them on hot summer days! 

Homemade blueberry yogurt popsicles have the perfect texture, beautiful color of the blueberries, sugar, the creaminess of greek yogurt, a bit of sweet and tart flavors of lemon juice. Adding a pinch of salt helps to bring out all the sweetness from blueberries. Blend everything, freeze into the popsicle molds, and they will be ready in 5-6 hours. Incredibly easy, isn’t it? 

Enjoy the season’s best fresh blueberry frozen treat! Buy some fresh blueberries, wash them thoroughly, and freeze them before using them in the recipe. Frozen blueberries add extra creaminess to the blueberry yogurt popsicles. You can buy the store bought frozen blueberries as well. 

I have used a store bought greek yogurt in this recipe to control the iciness and increase the creaminess in the popsicles. If you buy a full fat yogurt – make sure to hang it in a muslin cloth for 1-2 hours to remove whey from it. You can hang the yogurt for a few hours in the refrigerator as well.

Creamy Blueberry Yogurt popsicles

Ingredients

  • Blueberries
  • Lemon
  • Greek yogurt
  • Sugar
  • Salt

Blueberry Yogurt Popsicles Step By Step Recipe

Wash and clean fresh blueberries and freeze them for 2 hours. You can use store bought blueberries for this recipe as well. 

In a blending jar, add frozen blueberries, greek yogurt, sugar, lemon juice, salt, and blend everything until the mixture turns smooth and silky.

Pour the pureed mixture into the individual popsicle mold or disposable cups. Cover the disposable cup with aluminum foil and make a slight cut in the middle with a knife. 

Add the popsicle stick in the middle and place the molds in the freezer for 6 hours or overnight.

How To Remove Popsicles From The Mold?

Fill a cup or glass with warm water, set the popsicle mold into the cup (stick side up) for about 10 seconds. This will slightly warm the sides of the popsicles, allowing them to be removed easily. 

You can gently rub the mold between your palms to create some warmth allowing the popsicles to be removed easily. 

Tips For Making Blueberry Yogurt Popsicles

  • Make sure to use frozen blueberries to get thicker and creamier blueberry yogurt popsicles. 
  • Use full fat yogurt or greek yogurt in the recipe. Don’t substitute low-fat yogurt as it will contain higher water content and will produce icier pops.
  • I have used greek yogurt in the recipe. If you buy full fat yogurt – make sure to hang it in a muslin cloth for 1-2 hours to remove whey from it.
  • I have added sugar in the recipe but you can use honey or maple syrup. You can mix half sugar and half honey in the recipe as well. 
  • You can freeze the blueberry yogurt puree into an airtight container and enjoy a scoop of frozen blueberry yogurt.

Variations

  • You can use two or more types of berries in this recipe. Mix blueberries and strawberries or blueberry, strawberry, raspberry, and blackberries.
  • Add some lemon zest if you wish. 
  • Incorporate some chia seeds for an extra dose of protein and make the blueberry yogurt popsicles more healthier. Add the chia seeds into the blended puree mixture before transferring it to the mold. 
  • Add some vanilla extract for beautiful flavors instead of lemon juice. 
  • If you like to create some swirls in the popsicles then blend together some  blueberries, ¼ cup sugar, and lemon juice. In a bowl whisk together the rest of the sugar and greek yogurt. Add some yogurt mixture in the popsicle mold, followed by some blueberries mixture and so on until all the cavity of the mold is covered. Insert the popsicle stick and set to freeze them.

How To Store The Mango Yogurt Popsicles?

You can store the mango popsicles for 2 months in a freezer safe container or a reusable silicon bag once you take them out of the mold.

Do not leave the popsicles in plastic molds for more than 4 days. It may give a different taste to the popsicles.
