This Creamy Broccoli Almond Soup is flavorful, velvety smooth, and delicious. It is so perfect and comforting to enjoy on chilly days. The simple, yet amazing tasting soup is packed with nutritious broccoli, almonds, corn, onions, and garlic.
It is a very healthy, nutty, and buttery soup that is so thick and creamy without adding any butter or cream and is loaded with so many nutrients and flavors. This is a dairy-free and vegan soup recipe to try in winters.
This gorgeous green colored broccoli almond soup is lightly sweet and silky by adding onion, corn, and almonds. Enjoy it on its own, with some croutons, or warm bread. I have added some crunchy sliced almonds, sautéed garlic, onions, and broccoli for a beautiful look and texture. Make it as a side dish along with some sandwiches, burgers, or wraps.
Almonds add a beautiful texture and creaminess in the broccoli almond soup. The soup tastes so rich and luscious without making a roux – made by using flour, butter, and milk. Almonds give nutty flavors, richness, and thickness to the soup.
Sautéed garlic, onions, and corn add some sweetness and silky touch in the soup. The flavors of garlic and corn are so complementing with the broccoli and almonds. You can definitely add some celery or carrots in the recipe if you like.

Broccoli Almond Soup Step By Step Recipe
Making The Soup
Heat 2 tsp olive oil in a large pot on medium heat.
Add some sliced garlic and sauté for 10 seconds.
Transfer some chopped onions, salt, and sauté them for 1 minute until translucent and without changing their color.
Add some almonds and corn, sauté them for 30 seconds. Next, add some black pepper powder.
Transfer the broccoli florets, stems, and cook them until the raw smell is out for about 5-7 minutes.
Add 3 cups of water, cover the pot with a lid, and cook the veggies for about 12-15 minutes. Let the broccoli cook until it turns soft.
Blend the veggies until smooth with a hand blender or regular blender and serve hot. You can add some water for achieving the perfect consistency according to your taste. Adjust the salt and boil the broccoli almond soup before serving.
For Garnishing
Heat 1 tsp oil in a pan on medium heat, add finely chopped onions, garlic, and a pinch of salt. Sauté them for 1 minute until slightly brown, add some finely chopped broccoli, and cook for about 1 minute.
Serving
Serve the piping hot soup in 4 bowls, drizzle some olive oil, sprinkle some black pepper powder, divide the veggie toppings equally, and add some roasted sliced almonds.
You can add some crushed pepper for a kick.

- Make sure to keep medium sized broccoli florets so they will cook equally and fast.
- Do not throw away the tender stems of broccoli, they are very nutritious and taste amazing.
- If you are using a hand blender, the soup blends pretty fast if the broccoli florets are medium sized.
- While using a regular blender, make sure to add warm veggies before blending into a smooth soup.
- Cooking the broccoli in the pot for 5-7 minutes is very important before adding the water to it. The broccoli will release a raw smell from them and the broccoli almond soup will turn out super delicious.

- Use pre-cut or frozen broccoli florets for convenience.
- I have used frozen corn kernels, you can use fresh ones in the recipe.
- Add some celery, carrots, or spinach in this broccoli almond soup. These veggies go really well with almonds and broccoli.
- Soak the almonds and remove their skin before adding them into the recipe.

You can store the broccoli almond soup in an airtight container for 4-5 days in a refrigerator. Boil the soup over a stovetop before consuming.
