Tofu strips are tossed in a spicy lime marinade and baked to perfection into the oven to make them crispy. At the end, they are tossed with colorful veggies which are cooked until tender with homemade spicy seasoning. 

When you are making these tofu fajitas, slicing the tofu into stripes helps them to roast perfectly. Cornstarch makes tofu turn crispy from the outside. The spacing is very important to make the tofu crispier from the outside while baking in the oven.

Ingredients

Baked Tofu:

  • Tofu – Extra firm
  • Cornstarch 
  • Olive oil

Tofu Marinade:

  • Red chili powder
  • Onion powder
  • Garlic powder
  • Lime juice
  • Salt
  • Olive oil

Fajita Veggies:

  • Onions
  • Red bell pepper
  • Yellow bell pepper
  • Orange bell pepper
  • Cilantro
  • Paprika
  • Red chili powder
  • Cumin powder
  • Onion powder
  • Garlic powder
  • Oregano
  • Salt
  • Olive oil

Yogurt Sauce:

  • Yogurt
  • Cumin powder
  • Black pepper powder
  • Salt

Toppings Options:

  • Hummus/Refried beans
  • Greens
  • Cheese
  • Yogurt sauce/Sour cream
  • Guacamole/Salsa
  • Wheat flour tortillas 

Easy Tofu Fajitas Step By Step Recipe

Pressing The Tofu 

Take one block of tofu and wrap it in a paper towel or a kitchen towel and sandwich it between two plates, keep some heavy object on the top for 20 minutes – I have used an iron skillet and a heavy food packet.

Remove as much water as possible by pressing the tofu and slice it into thin stripes. 

Roasting The Tofu

Sprinkle some cornstarch over the tofu slices and toss everything together. 

In a small bowl, mix together the tofu marinade ingredients, and toss it with tofu. Let the tofu sit for 10-15 minutes.

Line a baking tray with parchment paper, brush 1 tsp oil, and set it aside.

Preheat the oven to 400℉/200℃ 

Place the marinated tofu in the prepared baking tray by spacing between them. 

Roast the tofu slices for 20 minutes, flip them with a spatula, and cook for 10 more minutes from the other side.

Fajita Veggies

Heat some oil in the skillet on medium heat, add sliced onions, and sauté for 3-4 minutes.

Transfer the sliced mixed bell peppers and sauté for 3 minutes.

Turn off the stove and combine all the fajita veggies spices.

Next, combine the roasted crunchy tofu slices to the fajita veggies.

Garnish the dish with some cilantro.

Yogurt Sauce

In a small bowl, whip up all the yogurt sauce ingredients. 

Assembling 

Heat the tortillas directly on the stovetop or in the oven. 

Divide the tofu fajitas on the warm tortillas equally with your favorite toppings. 

Tips For Making Tofu Fajitas

  • Using extra firm tofu is very important to retain its shape in the recipe and make the tofu crispy. 
  • Pressing the tofu with some heavy object helps to take away all the moisture quickly from the tofu. 
  • When you are making these tofu fajitas, slicing the tofu into stripes helps them to roast perfectly crispy.
  • The spacing is very important to make the tofu crispier from the outside while baking in the oven.
  • Cooking the veggies tender and crunchy is very important. 
  • Combining the fajita spices at the end helps maintain the gorgeous colors of the veggies.

  • Instead of roasting the tofu in the oven, you can cook it in a pan on the stovetop for 15-20 minutes from both sides until they turn crispy on low heat. 
  • You can use any kind of bell pepper in this recipe.
  • If you like to add some meaty texture to the dish then you can add some portobello mushrooms in the recipe. Make sure to cook them in the pan until they are moisture free or roast them in the oven.
  • Roast the veggies in a different baking pan in the oven for about 10-15 minutes and later mix the fajita veggie spices for convenience. 

How To Store Tofu Fajitas?

Tofu fajitas can be stored in an airtight container for 4 days in a refrigerator. It makes a perfect meal prep recipe for busy weekdays. 

Reheat the veggies and tofu in the oven or in the skillet and enjoy!

  • Warm up 8 tortillas, spread your favorite hummus, add some greens, divide the tofu fajitas, drizzle some yogurt sauce, and shredded cheese on the top. For a vegan diet, skip adding the cheese and yogurt sauce.
  • Enjoy them with refried beans, salsa, sour cream, cheese, greens, and some warm tortillas. 
  • Serve the tofu fajitas with cilantro lime rice, guacamole, pico de gallo, black beans, lettuce, sour cream, and cheese.
