Cabbage Rice

- 4 cups Cabbage chopped
- 3 Green chilis chopped
- 1/2 inch Ginger chopped
- 8-10 Curry leaves
- 1.5 cups Basmati rice
- 1/3 cup Peanuts raw
- 1 tsp Mustard Seeds/Rai
- 1/2 tsp Cumin Seeds/Jeera
- 1/4 tsp Asafoetida/hing
- 1/4 tsp Turmeric powder/Haldi
- 1.5 tsp Coriander powder/Dhania Powder
- 1/4 tsp Cumin powder/Jeera powder
- 1/4 tsp Goda masala optional
- 1.5 tsp Salt or as required
- 3 tbsp Oil
- 2 1/4 cup Water
- Coriander leaves/Dhania patta for garnishing
Wash basmati rice 3 times very well. Soak the rice in some water and set aside for 1 hour.
Heat some oil in a pressure cooker on a medium heat. Lower the heat, add peanuts and fry them for 30 seconds. Keep them at one side of the cooker or set aside in a different plate.
Add mustard seeds and let them splutter. After that, add cumin seeds, asafoetida, ginger, chilis, and curry leaves. Add peanuts if you have kept them aside. Mix everything well.
Next, add cabbage, turmeric powder, coriander powder, cumin powder, goda masala, rice, and salt. Roast everything for 30 seconds.
Add 2 1/4 cups of water and mix well. Close the pressure cooker lid and set it to medium-high heat for 1 whistle.
Once all the pressure is released, open the lid and keep it half open for about 5-7 minutes.
Fluff the rice with a fork and then serve it by garnishing with some chopped coriander leaves.
Cabbage Rice In The Pan
Follow the same procedure until adding rice. Add some warm water in the rice mixture so the temperature will remain the same. It will turn soft and cook faster as well.
Cook it on a medium to low heat for about 5-7 minutes and mix it well. Cover it with a lid and cook for about 5-7 minutes on a low heat.
- If you like your rice more spicy then add few more chilis as per your taste.
- You can add clarified ghee while serving the rice to enhance the taste.
- Try to soak the rice at least for 30 minutes before cooking.
- You can make the cabbage rice in the pan as well. If you feel the rice is dry add 1/4 cup of extra water.
