- 1.5 cup Blueberries frozen for 2 hours
- 1 tbsp Lemon juice
- 2 cup Greek yogurt
- 1/3 cup Sugar or as required
- 1/8 tsp Salt
Wash and clean fresh blueberries and freeze them for 2 hours. You can use store bought blueberries for this recipe as well.
In a blending jar, add frozen blueberries, greek yogurt, sugar, lemon juice, salt, and blend everything until the mixture turns smooth and silky.
Pour the pureed mixture into the individual popsicle mold or disposable cups. Cover the disposable cup with aluminum foil and make a slight cut in the middle with a knife.
Add the popsicle stick in the middle and place the molds in the freezer for 6 hours or overnight.
- Make sure to use frozen blueberries to get thicker and creamier popsicles.
- Use full fat yogurt or greek yogurt in the recipe. Don’t substitute low-fat yogurt as it will contain higher water content and will produce icier pops.
- I have used greek yogurt in the recipe. If you buy full fat yogurt - make sure to hang it in a muslin cloth for 1-2 hours to remove whey from it. For more information about making a hung curd check out my Kesar Pista Shrikhand Recipe.
- I have added sugar in the recipe but you can use honey or maple syrup. You can mix half sugar and half honey in the recipe as well.
- You can freeze the blueberry yogurt puree into an airtight container and enjoy a scoop of frozen blueberry yogurt.
