Oven Roasted Asparagus

Oven roasted asparagus is a perfectly delicious side dish for any meal!

- 1 bunch Asparagus
- 1/2 tsp Lemon juice
- 3-4 Lemon slices optional
- 4 cloves Garlic chopped
- 1/4 cup Breadcrumbs plain
- 1/4 tsp Chili flakes
- 1/4 tsp Black pepper powder
- 1/4 tsp Oregano
- 1/8 tsp Red chili powder optional
- 1/2 tsp Kosher salt or as required
- 2 tbsp Parmesan cheese grated
- 1.5 tbsp Olive oil
In a small bowl, add olive oil, garlic, chili flakes, pepper powder, oregano, lemon juice, and salt. Set aside for 10 minutes.
Preheat the oven to 425℉/220℃ and line a baking tray with aluminium foil or a parchment paper.
Wash the asparagus and trim off the tough and woody ends.
Toss prepared asparagus with the oil mixture on a prepared baking tray. Separate the asparagus for an even roasting in the same direction.
Spread the bread crumbs all over the asparagus and 3-4 lemon slices. Sprinkle some red chili powder if you like on the lemon slices. Bake them for 12 minutes.
Sprinkle 2 tbsp of parmesan cheese and bake for another 2 minutes and serve.

If the asparagus is pencil thin then it may take only 10 minutes and a thicker one will need 15-18 minutes for roasting.
- You can skip adding breadcrumbs to the recipe for a gluten-free option.
- Add a few Tbsp of garlic butter as well to enhance the flavors if you like.
- You can add mozzarella cheese and bake until the cheese melts and gets slightly golden, for about 2-3 minutes. You can broil it as well.
- Skip adding cheese for a dairy-free oven roasted asparagus.
