Place 1 cup of oats in a high speed blender and grind until it turns into flour.
In a large mixing bowl, combine peanut butter, honey, ground oats, rolled oats, and 2 tbsp coconut.
Mix everything well with a rubber spatula until all the ingredients are combined. Use your hands to make the dough.
Line a baking pan with parchment paper and set aside.
Divide the dough into 12 equal sized balls, roll each ball into the leftover coconut, and place it on a baking tray.
If you are using chocolate drizzle, add chocolate chips into a microwave safe bowl, microwave it for 1 minute, and mix well.
Combine coconut oil in the bowl, microwave it for 30 seconds, and mix well.
You can use the double boiler method for melting chocolate as well. Place a saucepan on the stove and add 2-3 inches of water. Place a heat safe bowl over the pan. The bowl should fit over the pan. Add chocolate chips, coconut oil, and stir it until it melts down.
Drizzle the melted chocolate over the prepared balls with a spoon. You can dip the balls into the melted chocolate and sprinkle some shredded coconut over them.
Leave the balls on the countertop until melted chocolate reaches at room temperature or refrigerate until the chocolate sets.
