Peanut Butter Oatmeal Bites

These peanut butter oatmeal bites are a no-bake, quick, and easy healthy snack. Protein packed energy bites are perfect for post workout or a mid afternoon treat.

Ingredients
  

  • 1.5 cup Rolled oats
  • 1/2 cup Peanut butter *see notes
  • 3 tbsp Shredded coconut unsweetened, divided
  • 1/4 cup Honey
  • 2 tbsp Chocolate chips
  • 1 tsp Coconut oil *see notes

Instructions
 

  • Place 1 cup of oats in a high speed blender and grind until it turns into flour.
  • In a large mixing bowl, combine peanut butter, honey, ground oats, rolled oats, and 2 tbsp coconut.
  • Mix everything well with a rubber spatula until all the ingredients are combined. Use your hands to make the dough.
  • Line a baking pan with parchment paper and set aside.
  • Divide the dough into 12 equal sized balls, roll each ball into the leftover coconut, and place it on a baking tray.
  • If you are using chocolate drizzle, add chocolate chips into a microwave safe bowl, microwave it for 1 minute, and mix well.
  • Combine coconut oil in the bowl, microwave it for 30 seconds, and mix well.
  • You can use the double boiler method for melting chocolate as well. Place a saucepan on the stove and add 2-3 inches of water. Place a heat safe bowl over the pan. The bowl should fit over the pan. Add chocolate chips, coconut oil, and stir it until it melts down.
  • Drizzle the melted chocolate over the prepared balls with a spoon. You can dip the balls into the melted chocolate and sprinkle some shredded coconut over them.
  • Leave the balls on the countertop until melted chocolate reaches at room temperature or refrigerate until the chocolate sets.

Notes

  • Use a relatively fresh jar of peanut butter, old peanut butter gets very dry and hard. Mix the peanut butter with a spoon before using it in the recipe.
  • You can use almond butter instead of peanut butter in this recipe.
  • As we are using all the ingredients raw, make sure to use fresh rolled oats and coconut for this recipe.
  • Old fashioned rolled oats work the best for this recipe. I would not recommend using steel cut or instant oats.
  • Skip adding chocolate drizzle and combine the chocolate chips in the mixture before forming the balls.
  • Add butter or ghee instead of coconut oil while melting the chocolate for making a drizzle.
