Ingredients

  • 2-3 large Carrots 200 grams
  • 6-7 Curry leaves
  • 1 large Garlic crushed
  • 2 tbsp Cilantro chopped
  • 2 tsp Tomato puree or 1 tsp tomato ketchup
  • 1 tsp Mustard seeds
  • 1 tbsp sesame seeds white
  • 1/4 tsp Asafoetida/hing
  • 1/8 tsp Turmeric powder
  • 1/4 tsp Red chili Powder
  • 1/3 tsp Salt or as required
  • 1 pinch Sugar
  • 2 tsp Oil

Instructions

  • Wash the carrots and peel them with a vegetable peeler. Cut ½ inch top and bottom part of the carrots and discard them. Next, cut the carrots into a thin disc shape and set aside.
  • Heat 2 tsp oil in the pan over medium heat. Once the oil is hot, add mustard seeds and let them splutter.
  • Next, add asafoetida, curry leaves, crushed garlic, and turmeric powder.
  • Transfer the prepared carrots into the pan, mix, and cover the pan with a lid for about 1 minute.
  • Remove the lid and add tomato puree/ketchup, red chili powder, salt, sugar, mix, and cook covered for 4-5 minutes or until carrots turn tender.
  • Next, add some sesame seeds, cilantro leaves, cook uncovered for 2 minutes, and serve.

Notes

  • Use long and equal sized carrots to form symmetrical shaped discs.
  • Try to cut the carrots into thin discs so they will cook faster and evenly.
  • If you are using tomato ketchup then add 1 tsp into the sabzi - it is more concentrated and on the sweeter side.
  • Do not overcook the carrots for the best tasting recipe.
