- 2-3 large Carrots 200 grams
- 6-7 Curry leaves
- 1 large Garlic crushed
- 2 tbsp Cilantro chopped
- 2 tsp Tomato puree or 1 tsp tomato ketchup
- 1 tsp Mustard seeds
- 1 tbsp sesame seeds white
- 1/4 tsp Asafoetida/hing
- 1/8 tsp Turmeric powder
- 1/4 tsp Red chili Powder
- 1/3 tsp Salt or as required
- 1 pinch Sugar
- 2 tsp Oil
Wash the carrots and peel them with a vegetable peeler. Cut ½ inch top and bottom part of the carrots and discard them. Next, cut the carrots into a thin disc shape and set aside.
Heat 2 tsp oil in the pan over medium heat. Once the oil is hot, add mustard seeds and let them splutter.
Next, add asafoetida, curry leaves, crushed garlic, and turmeric powder.
Transfer the prepared carrots into the pan, mix, and cover the pan with a lid for about 1 minute.
Remove the lid and add tomato puree/ketchup, red chili powder, salt, sugar, mix, and cook covered for 4-5 minutes or until carrots turn tender.
Next, add some sesame seeds, cilantro leaves, cook uncovered for 2 minutes, and serve.
- Use long and equal sized carrots to form symmetrical shaped discs.
- Try to cut the carrots into thin discs so they will cook faster and evenly.
- If you are using tomato ketchup then add 1 tsp into the sabzi - it is more concentrated and on the sweeter side.
- Do not overcook the carrots for the best tasting recipe.
