Ingredients

  • 1/4 cup Chia seeds
  • 1 cup Almond milk
  • 12 oz Strawberries around 15-16 strawberries, chopped
  • 1 tsp Vanilla extract optional
  • 2.5 tbsp Honey or any sweetener

Instructions

  • In a blending jar, add the chopped strawberries, honey, vanilla extract, and almond milk. Blend everything until it becomes smooth.
  • In a medium size bowl, transfer the chia seeds, add blended mixture to the bowl, and mix everything well with a spoon.
  • Cover and refrigerate the pudding for 2 hours, mix the mixture one more time, and chill it for 4 more hours (overnight) for that perfectly thick and creamy pudding.
  • Place some strawberry slices on the side of a serving cup. With the help of a spoon, transfer and divide the pudding to the serving cups. Garnish with a whole strawberry or chopped strawberry, blueberry or mixed berries, and serve.

Notes

  • The best chia seeds to liquid ratio is 1:4 - This means for each 1 tbsp chia seeds, you need ¼ cup of milk, or for every ¼ cup of chia seeds, you will need 1 cup of milk.
  • Once you set the chia pudding in the refrigerator, stir the pudding after 2 hours to mix them well with the liquid.
  • You can check the pudding consistency after 4 hours. If you add more liquid by mistake or find the pudding is too runny then add 1-2 tbsp of chia seeds and mix well. Soak them for a couple of more hours and adjust the sweetness.
